Quick One Pot Hungarian Chicken and Noodles With Cabbage Recipe

Well, I had half a head of lettuce left over.  What to do?  So, I hit the internet and found this great recipe.



It calls for ground chicken, but I happened to have some left over BBQ chicken.  Went out and bought some more baked chicken.

I guess the secret is the caraway seeds.

I also loved the use of butter instead of oil.

I left it out for a while as I dithered the night away.   Finally, before I went to bed, I gave in to temptation and ate some.  AWESOME!!!!!!

Today, I heat it up and the whole family sits down to enjoy it!

Chicken Enchilada Cornbread Casserole

OK.  Another chicken rotisserie casserole.  I like this one since it uses cornbread.

I didn't have any self-rising cornbread so I made some.  All you do is add a bit baking powder (I used Clabber Girl) and salt will do the trick.

We loved it!

I didn't used a cast iron dish. I used an aluminum square pan instead.

Chicken and Spinach Casserole

I've been trying out various precooked rotisserie chicken recipes.  They all seem to involve rice.  But I did find this Martha Stewart recipe that uses spinach.

What impressed me the most was the great flavor the next day.  I highly recommend. this recipe.

I didn't run into any problems with this recipe.  I found all the ingredients and didn't make any enhancements to it.
